Sixth-graders at Roosevelt Middle School in New Mexico are growing herbs and several varieties of lettuce in a vertical farm prototype that offers maximum plant growth with minimal space, energy and water requirements. Students are actively involved in the design, troubleshooting and upkeep of the system, and have enjoyed around 200 salads from their efforts.
