How school nutrition pros adapt to USDA sodium limits

The USDA has implemented lower sodium limits in school meals for the 2023-2024 academic year with reductions ranging from 120 mg to 135 mg depending on grade level. School cafeterias are adapting by incorporating herbs, spices and healthier alternatives, aiming to encourage students to make healthier dietary choices from a young age, according to Kathleen Britton, the Utah State Board of Education's director of child nutrition.
