Corn is unique in that it is considered both a grain and a vegetable, and registered dietitians extol the nutritional virtues of corn eaten as a vegetable. Corn contains the antioxidants lutein and zeaxanthin, is a source of plant protein and fiber, and while fresh corn on the cob may be sweeter and crunchier than canned or frozen, RD Maya Vadiveloo says "if you can't shop frequently, frozen vegetables are fantastic, and frozen corn is as nutrient-dense as what you can get at the farmers market and much more affordable."
