Veggie-rich diet may improve glucose tolerance

A study in The Journal of Clinical Endocrinology & Metabolism found that consuming a diet rich in green, leafy, cruciferous and colorful vegetables may improve glucose tolerance and insulin sensitivity, while high intake of potato fries or chips may have adverse effects on these markers. The findings highlight the differential impact of vegetable subgroups on metabolic health.
