Eating "one to two cups of fresh spinach or half a cup of cooked spinach per day, can provide substantial health benefits without significant risk," according to registered dietitian nutritionist Yaa Boakye. Providing vitamins A, C and K, folate, magnesium, manganese, fiber and antioxidants, spinach offers healthful benefits, and would be difficult to eat in excess due to the high fiber content, which is satiating, but those prone to kidney stones or on blood thinners should be mindful not to eat too much spinach, Boakye and RD Caroline Young say.
