Calif. school nutrition pros receive culinary training

Training at the Culinary Institute of America in Napa, Calif., has helped the Fresno Unified School District elevate its menus to include chana masala, street tacos and barbecued tofu, shared Amanda Harvey, director of nutrition services for the district. "They learned how to utilize knives, how to prep, how to plan, how to really efficiently run their kitchens," added Harvey, who notes a grant from the California Department of Education funded the hands-on training for 70 of the more than 500 nutrition services employees.
